Easy cucumber sandwich

posted on: March 10, 2011

This was my solution to eating healthy today after getting home from my spring break trip to the beach (tomorrow's post!) where we ate nothing but hot-dogs and smores. It's somewhat healthy if you use low-fat cream cheese and its got a vegetable right? It's not exactly as cute as one you'd serve at a tea party, but if you are used to a dainty cucumber sandwich, by all means cut off the crusts! You can change up any of the amounts of spices depending on what you like.

Ingredients:
- Many, many cucumber slices, depending on the thickness you cut them. I like a lot.
- paprika-1 tsp
- celery salt-1tsp
- garlic powder-1tsp
- squirt of mayo ( In use the kind with olive oil)
- whipped cream cheese - 2 tbs
- 2 slices bread of any kind

Mix up the cream cheese in a bowl with the mayo, add in all the spices and re-mix. Spread onto bread and decorate with cucumber slices two-deep. EAT!
